For starting a gazebo simulation including robot and environment, please have a look at cob_bringup_sim.

Spawning a simulated Care-O-bot in gazebo

If you have started your own simulation environment not using cob_bringup_sim, you can spawn the Care-O-bot robot with

roslaunch cob_gazebo robot.launch
